  • 2 minced cloves garlic
  • 1 can (28 oz) crushed tomatoes
  • 1 teaspoon dried oregano

  • 1 cup shredded vegan cheese (optional)
  • Fresh parsley for garnish

Instructions

  • Preheat oven to 190 °C.
  • Boil the pasta as per the instructions on the package. Drain and keep it aside.
  • Heat the olive oil over medium flame. Sauté the chopped onion and minced garlic till it softens.
  • Add chopped butternut squash into the pan and cook until squash softens.
  • Add seasonings such as dried oregano, dried basil, salt, and pepper. Add tomato and stir. Simmer for 10-15 minutes until the squash is soft.
  • Combine the cooked pasta with the squash-tomato mixture in a large mixing bowl. Add butter beans, ensuring an even mix.
  • Move the pasta mixture to the baking dish. After that, you may add cheese if you want to.
  • Put it in the oven for 20–25 minutes or when you notice a golden top.
  • Allow the dish to cool before serving. Garnish it with fresh parsley.

Ingredients

  • 1 cup dried chickpeas (or canned, drained)
  • 2 tbsp olive oil
